Some snacks don't need reinventing. These smoky stuffed eggs bring together creamy yolks, a little Greek yogurt, mayonnaise, Dijon mustard, and smoked paprika for a savory, satisfying bite.

Smoked paprika adds a nuanced depth, and fresh chives add a bright finish. while a touch of horseradish is an easy option to include when you want to add some extra flare.

They're simple enough to prepare ahead and polished enough to display on a platter.

The secret to a smooth, creamy filling

Start with completely cooled hard-boiled eggs. Mash the yolks thoroughly before adding the other ingredients. A fork works perfectly well, but pressing the yolks through a fine-mesh sieve gives you an especially smooth filling.

Greek yogurt adds a gentle tang while a little mayonnaise keeps the mixture rich. Dijon brings sharpness, and smoked paprika gives the eggs their signature smoky flavor and a pop of color.

For a slightly bolder version, stir in a small amount of prepared horseradish. Start with about 1/2 teaspoon for the full batch, preferably without added sugar. You want it to complement the smoky filling, not overpower it.

Small details that make a difference

Dry the egg whites. Pat the cut sides gently with a paper towel so the filling sits neatly.

Taste the yolk mixture before filling the egg cups. Mustard, mayonnaise, and prepared horseradish can all contribute salt and acidity.

Spoon or pipe. A spoon is perfectly practical; a piping bag gives the eggs a more polished finish.

Garnish last. Add extra smoked paprika and fresh chives just before serving for the prettiest presentation.

Make them ahead

Cook and chill the eggs in advance. For the freshest presentation, prepare the filling and store it separately from the egg whites in covered containers in the refrigerator. Fill and garnish shortly before serving. Keep the finished eggs refrigerated until you're ready to enjoy them.
